Now finally my new kitchen is finished, I can start baking again, and that is just what I did. I started off easy though, just testing out the new oven! But who doesn’t like a plain vanilla sponge? It is light, airy and simply delicious! The simplicity is just mouth watering, and it is very easy to make even if your rubbish at baking (which I am!). I prefer baking than cooking, mainly because baking allows you to be incredibly creative with all the decoration, plus I haven’t really ventured into the world of cooking yet. However I will definitely purse this new adventure and will definitely blog about it this summer too! But for now if you want to make a small, cake perfect for summer here is how you make it.
What You Will Need:
- 125g of Butter or Margarine (I used the slightly healthier option of olive spread)
- 125g of Caster Sugar (If in doubt use normal sugar, like I did today!)
- 2 Medium Sized Eggs
- 125g of Self Raising Flour
Now my cake as you can see from the photos did not rise very well, either because the flour was a bit old, or because I added no baking powder, so I do recommend adding a tiny bit, just to help out.
Firstly preheat your oven to 180 degrees and line your baking trays with parchment or baking paper. Then you want to weigh out the butter and sugar, add the to a big ol’ mixing bowl and cream them together until its ‘light and fluffy’… such a cliche I know but its true. Crack the eggs into the mixture. Do one first, mix it, and then the other (this will avoid the mixture curdling!). Then weigh the flour and using a sieve add the flour and fold it into the mixture. I repeat FOLD NOT MIX or else your cake will loose the air which you already mixed into it! Add the mixture evenly into your pre-lined baking trays and pop into the oven for 20-25 minutes. Mine were ready at 20 minutes, but if your not sure, stick a knife into the center of the cake. If it comes out clean then its done, but if it comes out with mixture on the it still needs a little more cooking! Once cooked and cooled, you can either make your own icing, or use a pre-made icing like I did. Yes, I am that lazy person who buys icing, but I just find it so laborious making butter icing. I used the Betty Crocker Vanilla Butter Icing and OMG it is so lush I could juts eat it right out of the pot! I used a piping bag and put the icing in the middle of the cake and then did some splodges on top, and finished it with a dusting of icing sugar! YUM!
