Chocolate Chunk Brownies

When it comes to having a little something sweet, I don’t think you can beat a good brownie. Whatever brownie you make they are going to be good but I find that brownies with chocolate chunks in them just melt in the mouth even more and are like heaven. I thought I would share this recipe with you and you can thank me later…



SERVES: 12         |     PREP TIME: 15-20 mins      |      COOK TIME: 15-20 mins


65g of Plain Flour

1/2 Teaspoon of Baking Powder

100g of Cocoa Powder

Pinch of Salt

250g of Caster Sugar

1 Teaspoon of Vanilla Extract

150g of Butter

2 Eggs

2 Bars of Milk Chocolate

1/2 a Bag of Chocolate Chips

Heat the oven to 180c. This is also a good time to line or grease your baking tin. I used a square baking tin and lined the bottom with grease proof paper. Pop the butter in a microwaveable container and heat for 30 seconds, stir then heat again until all the butter is melted. Be careful as the butter will be really hot but stir in the sugar. Then stir in the vanilla extract, and cocoa powder until fully mixed. The eggs are next because you need to add one at a time, making sure they are fully mixed into the mixture. Don’t over mix the mixture though or else they won’t be as chewy as you might like them to be. Then melt one of the milk chocolate bars. Be really careful with this as melted chocolate gets HOT! You can either do this in a bowl over boiling water (how I did it), or in the microwave, but which ever way you use make sure to keep stirring it so it doesn’t burn. Burnt chocolate is NEVER good! Once you have mixed in the chocolate you want to add the dry items like the flour, salt and baking powder etc… Now you want to break the other chocolate bar into chunks and add that and the chocolate chips to the mixture. Spread this into your lined or greased tray and bake for 15 to 20 minutes. The recipe said 15 minutes but mine actually took a little over 20 minutes, so out a knife in the middle to check. If it comes out clean it is done. Once it is baked leave it to cool completely and cut into squares. Finally dust with some icing sugar and enjoy!


They are great served with a warm drink like a hot chocolate or coffee! They aren’t the healthiest admittedly but they are so good that you can’t not bake them!
