• The Ultimate Gingerbread Brownies

    One thing I love is chocolate brownies, I mean my mum has always made the BEST chocolate brownies, ever since I remember – so much so they had a bit of a reputation. Another thing I love is gingerbread. When I was younger we would go into my local village, go to Warren’s Bakery and get one of their gingerbread men. So combining the two = heaven! Especially during autumn!

    I can’t say I am really one for sticking to recipes, mostly because when I use recipes of Pinterest I don’t sometimes have the right ingredients (preparation OBVS isn’t my strong point) so I just try to wing it, and if I goes wrong then whoooooops!

    Everything spice just is too fitting in autumn, so it would be criminal not to make anything gingerbread or at least try it. Hence why I have left the recipe down below so you can attempt making these incredibly yummy brownies that will just give you all the heart eyes!!

    Brownies have to be one of my fave desserts because they can be fudgey and gooey inside and if cooked to perfection they can melt in the mouth… this is actually making my mouth water writing about it!!


    Prep time: 15 mins | Cooking Time: 20-30 mins | Difficulty: Pretty Damn Easy


    What you will need:

    • 55g Butter
    • 56g of Chocolate
    • 110g of Black Treacle
    • 100g of Granulated Sugar
    • 2 eggs
    • 140g of Flour (I used self-raising but I think either will do)
    • 1/2 Teaspoon of Salt
    • 1 Teaspoon of Ground Cinnamon
    • 1 Teaspoon of Ground Ginger


    Firstly you want to get the boring bit of preheating your oven to 180C and lining a square baking tin so that you are prepped and ready to bakeeeee!

    You wanna melt the butter, and chocolate together – but on a low heat or else you will start to smell burning like I did… whoops.

    Take it off the heat and add the black treacle, sugar and eggs. I must admit I didn’t add the right sugars, purely because all I could find was dark brown and light brown sugar so I just whacked it all in and hoped for the best… and that pretty much sums up my baking entirely!

    The just add the flour, salt, cinnamon and ginger (the most important bit obvs) and mix in together. NGL I also added a bit of drinking chocolate because I was worried that it wasn’t going to be chocolatey enough, I think like 1 Tablespoon. I then poured it into the tray and I just added a load of dark and normal chocolate chips on the top because who doesn’t want more chocolate???

    I ended up baking mine for 30 mins so that when I put a knife in the centre only a few crumbs come out on it. That means it will be nice a fudgey on the inside! Yum! Let it cool down in the tray and then add some icing sugar for profess looking presentation!

      I love a good gingerbread man, so these look interesting, not heard of gingerbread ones so will definitely be giving these a try seeing as the weather is getting colder ginger is nice and warming and makes you feel cosy
